Grießschmarrn – An Austrian Sweet Semolina Treat

The Grießschmarrn is a typical Austrian sweet dish made of semolina. We have it mostly for lunch, one of my childhood memories. Tastes really delicious.

The Grießschmarrn goes well with stewed plums, apricots, elderberries, apple compote or puree and much more. (Just to name a few :-)) :-)) ) This time we had it with an apple-rhubarb puree. Apple-strawberry compote is also delicious.

You can make Grießschmarrn in the oven or in a pan.
I usually put it in the oven, but it roasts faster in the pan.

Grießschmarrn – An Austrian Sweet Semolina Treat
Portionen: 2 as main dish
Zutaten
  • 500 ml milk
  • 50 g sugar
  • 40 g butter
  • a pinch of salt
  • ½ tsp cinnamon (optional)
  • 180 g semolina
  • 30 g raisins
  • 2 egg yolk
To Roast
  • 40 g butter
To Serve
  • powdered sugar
  • stewed plums, apple compote or puree, or similar.
Anleitungen
  1. Bring milk, sugar, butter, salt and cinnamon (optional) to boil.

  2. Add semolina and stir until it thickens.

  3. Remove from fire, leave to cool for about 5 minutes.

  4. Stir in raisins and egg yolk.

  5. Spread on a baking tray with cling film, about 1 cm thick.

  6. Cover with cling film and leave to cool for some hours or over night.

  7. Cut semolina mix in pieces.

  8. Melt butter in an ovenproof pan.

  9. Add semolina pieces and toss in the butter.

  10. Put pan in preheated oven at 220° C for about 20 minutes until gold brown. Toss-over in between.

Roasting in pan:
  1. Instead of putting in the oven, roast semolina pieces on the stove, tossing until gold brown.

  2. Serve and dust with powdered sugar.

Rezept-Anmerkungen

Serve with stewed plums, apple compote or puree.
