Napolitaine – Mauritian Treats

“Soft like cotton candy that melts-in-the-mouth!” thats what our daughter says, as she let one vanish away.

Heavenly!

Napolitaine is a Mauritian speciality. You can buy it almost anywhere. Ambulant street vendor on a bicycle or the typical “tabagie” – a mauritian kiosk, where you can snatch cold drinks, cigarettes, little snacks – also known as gajak – not to forget Gato Piment. 🙂


Napolitaines are basically round and a bit bigger. Topped with a pink icing

I got this recipe from my sister in-law in Mauritius. She is a Pro in baking napolitaines, macarons, cakes and, and, and,…. the hit!!!

I adjusted the ingredients to our proportions. E.g. amount of butter and so on

It’s best to use softened butter, out of the fridge some hours before using or the night before.
It’s a fast and easy-to-do dough, requiring a bit of “finesse” in the fingers, but it is worth it

I prefere to bake them bite-size. Since the dough doesn’t have any sugar, it isn’t sweet.
In combination with the icing and jam or Nutella, just perfect!!

Napolitaines is a year-round treat.

Gericht: Biscuits and Cookies

Zutaten
For the dough:
  • 360 g flour
  • 55 g corn flour
  • 250 g softened butter
  • a good pinch of salt
For the Glaze:
  • 150 g powdered sugar
  • 3 Tblsp hot water
  • food coloring
For filling:
  • jam or Nutella or about 80 g melted chocolate
Anleitungen
  1. Mix plain flour with corn flour and sieve.

  2. Add softened butter and knead to a dough.

  3. Roll out (5 mm thick) on a well floured surface.

    Cut out circle or heart forms. Place carefully on baking tray with baking sheet.

  4. Bake in preheated ofen at 160 C for 20 minutes. (light in colour)

    Leave to cool.

  5. Stick two biscuits together, using some jam, Nutella or melted chocolate.

  6. For the glaze mix powdered sugar, hot water and food coloring. (If consistency too fluid add powdered sugar, if to firm add some drops of water.)

  7. Spread glaze on biscuits using a spoon or a piping bag (or freezer bag).

    Decorate according to taste.
