This year I tried many recipes with beetroot. I love this vegetable, specially the color. My husband, „Oh joy“! 🙂

Beetroot Cookies

Gericht: Adventskalender 2017, Biscuits and Cookies

Zutaten

• 300 g flour
• 1 tsp bicarbonate of soda
• 1 tsp salt
• 250 g butter softened
• 140 g sugar
• 140 g brown sugar
• 1 egg
• 120 g beetroot puree
• 150 g chocolate chopped

Anleitungen

1. Mix flour, bicarbonate of soda and salt.
   

2. Whisk butter with sugar and brown sugar.
   

3. Add egg, beetroot puree and mix.
   

   
   

4. Add flour mixture.
   

   
   

5. And last, mix chopped chocolate.
   

6. Form little "balls" using a teaspoon and place on baking tray, leaving enough space in between.
   

   
   

7. Bake in preheated oven at 190° C for 10 minutes.
   

Rezept-Anmerkungen

Beetroot puree:

Boil beetroot and mash to a puree 🙂
