Apple Cake with Almond Crust
I love all kinds of apple cake. This apple cake with almond crust is especially delicious because of the almond crust, which harmonises perfectly with the delicately tart, sweet apples.
The base is a simple shortcrust pastry that is quick to prepare.

Tasty apple cake
I had to bake this cake three times before I could take pictures of it. The children couldn’t wait to eat it each time because it was so delicious. 🙂
- 250 g flour
- 50 g powdered sugar
- a pinch of salt
- 120 g butter
- 1 egg
- 900 g apples
- 1 tsp cinnamon
- 100 g butter
- 100 g sugar
- 50 g flour
- 120 g wipped cream (single)
- 200 g flaked almonds

Put flour, powdered sugar and salt in a bowl and mix.

Add butter in small pieces and crumble.

Add egg and knead to a dough.

Roll out the dough on a floured surface then place in a springform pan Ø26cm, and form. (up to the rim)

Place in refrigerator.

Peel, core and quarter the apples, then cut into thin slices.

Mix apple slices with cinnamon.

Fill apples in the shortcrust dough.

Bring butter and sugar to melt in a medium pot.

Stir in flour.

Pour in the butter/sugar cream and stir until smooth. Place away from heat.

Mix in the flaked almonds.

Pour the mixture onto the cake and spread it out evenly.

Bake in preheated oven at 180°C for about 60 minutes

Leave to cool.
