Apple Walnut Gugelhupf
This Apple Walnut Gugelhupf is so moist and really delicious.
My dear aunt baked this cake for us and it was eaten so quickly. Now I got the recipe from her and finally baked it.
You could also use hazelnuts, Instead of walnuts.
The nuts and apples make the cake so moist, making it stay fresh for some days.
And now I share this recipe with you!
- 2 big apples (or 3 small apples)
- 250 g softened butter
- 250 g sugar
- 1 tsp vanilla extract
- 6 egg yolk
- 6 egg white
- a pinch of salt
- 250 g flour
- 2 tsp baking powder
- 120 g grounded walnuts
- 100 g chopped chocolate
- 100 g chopped chocolate
- 1 tsp coconut oil

Grease and flour gugelhupf form (Bundt pan). (or sprinkle with fine bread crumbs instead of flour)

Peel and pit apples, cut in small pieces.

Beat butter, half of the sugar and vanilla until light and creamy.

Mix-in egg yolk one at a time.

In a separate bowl whisk egg whites with remaining sugar and salt until it is stiff.

Mix flour, baking powder, walnuts and chocolate in a bowl.

Fold in the flour-mix and stiff egg whites in the butter mixture.

Last, fold in the apples.

Put batter in bundt pan and smooth.

Bake in preheated oven at 170° C for about 60 minutes.

Leave to cool.

For the glaze melt chocolate and coconut oil over bain-marie.

Glaze the cake and leave to cool.
