Cherry Hand Pies

These Cherry Hand Pies are great as a little present, for Valentine’s Day, Mother’s Day, birthday, or just so.

They are made of a delicious Pie Crust and an easy cherry filling.

I got 12 hearts from the dough I made. Since I do not have such a large heart cutter, I cut a 10 cm heart out of a cardboard and used it as a template. Worked out just great.

The Cherry Hand Pies taste best when still warm, but taste just as good on the next day.
You can also prepare the Pie Crust and the cherry filling the day before.

Here we used the same base as for the large pie.

Best Pie Crust
  • 350 g flour
  • 1 tsp sugar
  • 1 tsp salt
  • 250 g cold butter
  • 6 tbsp ice cold water
  1. Mix flour, sugar and salt.

  2. Add cold butter pieces and knead. (Best using a food processor.)

  3. Add ice water and knead for a very short moment.

  4. Divide dough in two and wrap in cling film.

  5. Place in fridge for 1 hour.

The butter and water should be very cold.
The dough should stay cold, that is why it is best to use a food processor to knead.
Knead the dough shortly, so it stays buttery and flaky.

For the ice water I use a small bowl with water and ice cubes. Out of this I take the 6 tablespoons of ice water.

Cherry Hand Pies
  • 1 Pie Crust
Cherry Filling
  • 1 jar cherries
  • 2 tbsp sugar
  • tbsp corn starch
  • about 2 tbsp milk
  • 2 tbsp brown sugar
Cherry Filling
  1. Place the cherries in a strainer to drain, collecting the juice in a pot.

  2. Add sugar and cornstarch to the juice.

  3. Heat slowly while stirring.

  4. When it thickens, fold in the cherries.

  5. Leave to cool.

To finish
  1. Roll out the pie crust on a floured surface.

  2. Cut out hearts (about 10 cm) with a cookie cutter or using a template. (I had a template made out of cardboard.)

  3. Put the filling on one half of the hearts. (Leave edge free.)

  4. Cut a small cross in the center of the remaining hearts, or use a mini cookie cutter to cut out a heart, for example.

  5. Place these hearts on top of the hearts with the cherry filling and press the edges down with a fork.

  6. Place on a baking tray with baking paper.

  7. Brush with milk.

  8. Sprinkle with brown sugar.

  9. Bake in preheated oven at 200° C for about 19 to 20 minutes.

Enjoy baking!
