Coconut Sticks
These Coconut Sticks are one of our favorite cookies. My aunt has baked them every year since I was a child.
A “kind of” cake is baked on a baking tray, cut into pieces, then dipped in a chocolate dip and rolled in coconut flakes.
In the dip, you can vary the rum, depending on whether children are eating with you. (Although a little bit belongs in any case.) 🙂

Rum Cut Cookies
Filled Gingerbread
Linzer Streifen – Austrian (Christmas) Cookies
- 40 g butter softened
- 100 g sugar
- 1 egg
- 125 g flour
- 15 g cacao powder
- 1/2 tsp baking powder
- 100 ml milk
- 1/2 tsp lemon juice
- 200 g bittersweet chocolate chopped
- 150 g coconut fat or oil
- 200 ml milk
- 80 g icing sugar
- 1-2 shot rum
- about 300 g coconut flakes

Whisk butter, sugar and egg.

Sieve flour, baking powder and cacao powder, add with milk and lemon juice to butter-sugar-egg-mixture.

Pour on a baking tray with a baking frame (about 20 x 30 cm) and spread evenly. Or use a baking dish (casserole) with baking paper.

Bake in preheated oven at 170° C for 25 minutes.

Let it cool down.

Cut it in sticks (about 2 x 5 cm)

Put chocolate, coconut fat or oil, milk, icing sugar and rum in a pot and warm up slowly till melted. Stirring to avoid sticking.

Dip the sticks into the chocolate mixture and roll in coconut flakes.
There will be some chocolate dip left. Please don´t through it . You can do:
- Rum or Coconut Balls
Put coconut flakes (and rum) in the chocolate mixture and place in fridge. Form balls and roll in coconut flakes. - Use as a bread spread
Add some coconut flakes or grounded nuts and spread on your bread.
Keep at room temperature.
