Gingerbread Cookies

These are the gingerbread cookies I bake when it’s actually too early for Christmas baking, but I want to get in the mood 😉

Cookies can be baked all year round. I wouldn’t bake these gingerbread cookies in summer, but in autumn, especially when the weather is so grim.

It’s a quick and easy recipe.

Gingerbread Cookies
  • 250 g softened butter
  • 50 g honey
  • 100 g sugar
  • 150 g brown sugar
  • a pinch of salt
  • 1 tsp vanilla extract
  • 2 eggs
  • 400 g flour
  • 3 tsp gingerbread spice
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 100 g chocolate drops or chopped chocolate
  1. Beat softened butter, sugar (white and brown), salt and vanilla until creamy and light.

  2. Stir in eggs, one at a time.

  3. Mix in flour, gingerbread spice, baking powder, baking soda chocolate drops.

  4. Using an ice cream scoop (or spoon), place balls on baking tray with baking paper. Leaving enough space inbetween.

  5. Bake in preheated oven at 180° C for about 10 to 13 minutes.

  6. Leave to cool on baking tray.

  7. Store in a cookie box.
