Oatmeal Cookies with Nuts
Crunchy, nutty and a little bit chocolaty!!! We find these Oatmeal Cookies really delicious! Just nice to nibble or maybe even for breakfast? These cookies remind me of a crunchy cereal. 🙂
From this amount of dough, you will get approximately 40 cookies. And believe me, they are so good that they will be gone in no time. Good that these oatmeal cookies with nuts are made so quickly!
I used hazelnuts this time, but any other kind of nuts will do too, and instead of chocolate drops, you can also use dried cranberries or raisins. There is no limit! So, go wild!!!
And here to the recipe:
- 250 g softened butter
- 150 g sugar
- 150 g brown sugar
- a pinch of salt
- some vanilla
- 2 eggs
- 100 g flour
- 100 g grounded nuts
- 100 g chopped nuts
- 200 g oatmeal
- 2 tsp baking powder
- ½ tsp cinnamon
- 100 g chocolate drops or chopped chocolate
Whisk softened butter, white and brown sugar, salt and vanilla until light and creamy.
Mix in eggs one by one.
Mix the dry ingredients and stir in the mixture.
Scoop balls with an ice scooper or a spoon and place with some distance in between on baking tray with baking paper.
Bake in preheated oven at 180° C for about 10 to 13 minutes.
Leave to cool on baking tray.
To store put in an airtight container.
