The Best Brownie Cookies

These brownie cookies are definitely something for all chocoholics, like me. 🙂
Everything good about brownies is packed into a cookie.

These cookies are also very quick to prepare and bake. Ideal if you have visitors coming on short notice or if you just fancy something chocolatey. 🙂

Using my brownie recipes – pear brownies and rhubarb cheesecake brownies – I derived them and made these cookies.

Precision is the word when baking these cookies, it took me exactly 8 minutes. They should still be soft on the inside. After 10 minutes, they were already too long in the oven and no longer resembled brownies.
Just try it out, because every oven bakes a little differently. Make sure you leave the cookies to cool on the tray.

Brownie Cookies EN
  • 200 g dark chocolate
  • 100 g butter
  • 2 eggs
  • 150 g sugar
  • some vanilla (½ tsp extract or 1 sachet vanilla sugar)
  • a pinch of salt
  • 120 g flour
  • 30 g cocoa powder
  • ½ tsp baking powder
  • 1 tsp instant coffee powder optional
  1. Chop chocolate in pieces.

  2. Melt chocolate and butter over bain-marie.

  3. Whisk eggs and sugar for about 3 minutes.

  4. Mix in melted chocolate.

  5. Sieve and mix in flour, cocoa powder, baking powder and coffee powder.

  6. Scoop the dough with an ice scooper or a tablespoon and place on baking tray with baking paper.

  7. Bake in preheated oven at 180° C for 8 minutes.

  8. Leave to cool on baking tray.
