Topfenknödel – Austrian Curd Dumplings

Topfenknödel (Curd Dumplings) are a typical Austrian pastry that we love to eat. These dumplings are made of a mixture with curd cheese and rolled in toasted breadcrumbs. We like it best with strawberry sauce. But the dumplings also taste very delicious with plum roaster or apricot roaster!

We sometimes have these curd dumplings for lunch, after a soup. The children love them! We`ve had them at my mums place too.

This recipe is a sure success and can be prepared very quickly. Moreover, this mixture does not need time to rest and the dumplings do not fall apart during cooking. Really easy to make!

Topfenknödel – Austrian Curd Dumplings
  • 500 g curd cheese (quark)
  • 3 eggs
  • 50 g melted butter
  • 50 g sugar
  • 1 tsp Vanilla extract
  • some lemon peel
  • a pinch of salt
  • 200 g bread crumbs
Toasted Bread Crumbs
  • 80 g butter
  • 200 g bread crumbs
  • 40 g sugar
  1. Mix the curd cheese, eggs, butter, sugar, vanilla extract, lemon zest and salt in a bowl.

  2. Add the breadcrumbs and mix well.

  3. Form small dumplings of about 4 cm Ø. (I got 17 dumplings).

  4. Bring a pan of water to boil.

  5. For the butter crumbs: Melt butter in a pan, add the breadcrumbs and sugar and toast until golden brown. Keep stirring so that they don't burn. When they are ready, remove from the heat.

  6. Salt the boiling water.

  7. Add the dumplings to the water and simmer gently for about 15 minutes.

  8. Lift them out of the water with a skimmer and immediately roll them in the butter crumbs.

  9. While still warm, serve on a plate with strawberry sauce, plum roast or stewed apricots.


If I don’t need all the dumplings right away, I put the rolled dumplings covered in the fridge and then cook them the next day.
