Our favourite asparagus salad! Easy and delicious!
Cut the end of the asparagus and peel the last third.
Cut the asparagus and tomatoes in equal pieces.
Heat a pan with olive oil. Add asparagus and season with salt and pepper. Roast the asparagus for about 5 - 8 minutes (depending on asparagus). Tossing every now and then. (Asparagus should stay a bit crunchy)
Add tomatoes and balsamic vinegar and roast for 2 more minutes.
Asparagus salad can be served warm or cold.
