Mix flour, almonds, sugar, speculoos spice, baking powder and salt in a bowl.
Add cubed butter and crumble.
Add eggs and knead to a dough.
Wrap in cling film and cool in fridge for minimum half an hour.
Cut dough in two halves. Roll out first half on floured surface.
Then roll with impression rolling pin if one at hand and using a cookie cutter, cut out forms. *
Place on a baking tray with baking paper.
Bake in preheated oven at 180° C for about 9 - 10 minutes.
* Same procedure with second half.
Of course you can also use speculoos forms or a cookie stamp.
