Salmon Quiche

„Is there anything I could take to the office for breakfast tomorrow?“ My husband was feeling like our kids, when they had to take something to school on special occasions.

After a short moment of brain storming, I said: “You can have a Salmon Quiche!“
Except from leek I had all ingredients at home.
And of we go…

The Salmon Quiche can be served warm or cold. Perfect for any occasion.

I guess it tasted good, since the plate was brought back clean.

Salmon Quiche
  • 250 g flour
  • 120 g butter
  • 1 egg
  • a pinch of salt
  • 1-2 tbsp water (if needed)
  • 1 leek
  • 2-3 tbsp oil
  • 200 g creme fraiche (or sour cream)
  • 4 eggs
  • 1 tsp wild garlic paste (optional)
  • salt and pepper to season
  • 200 g smoked salmon
  1. Crumble butter in cubes with flour.

  2. Add salt and egg and knead to a dough. If needed add some water.

  3. Roll out on a floured surface and put in a tart or quiche form. Cut the edges.

  4. Place in fridge.

  1. Cut leek in fine rings. Roast leek in the pan with some oil. Season with salt and pepper. Leave to cool a bit.

  2. Slice smoked salmon in stripes.

  1. Stir creme fraiche, eggs, wild garlic paste, salt and pepper.

  1. Spread roasted leek evenly on shortcrust.

  2. Spread salmon stripes.

  3. Pour gush on it.

  4. Bake in preheated oven at 180°C for about 35 minutes.


Can be served warm or cold.
