Wild garlic paste
We have been looking forward… its here!! The wild garlic!!!
A short ride to the woods in our neigbourhood near the river, crop for some wild garlic, wash them and leave to try a bit.
To conserve we make a paste, which we can use the whole year through.
Wild garlic paste is the base for a lot of wild garlic recipes. Goes also well with almost any dishes instead of garlic like soups, sauces, vegetables, meat and fish dishes, Italian pasta and much more.
- 200 g wild garlic leaves
- 2 tsp salt
- 100 g olive or sunflower oil

Wash wild garlic leaves and leave to dry. (or use salat spinner)

Cut and blend with salt and oil. (I mix the first half and then add the second half)

Fill in clean jars and store in a cool place. (fridge)
Enjoy blending!
