Cherry Crumble Cake with Marzipan
We had lots of cherries this season, we made a crumble cake with cherries and marzipan, not to forget our cherry coconut jam.
We mixed half of the marzipan to the shortcrust pastry and the other half we spread over the cherries.
I could not wait and let the cake cool down completely, so it was still fluid on the inside.
It doesn’t look that good, but tasted really good!
Give it a try!
- 450 g flour
- 100 g sugar
- a pinch of salt
- 250 g butter
- 1 egg
- 200 g marzipan (best cooled)
- 750 g fresh cherries or 1 jar cherries
- 3 tbsp cornstarch
- 1 tbsp sugar

Grate marzipan.

Mix flour, sugar, salt and crumble with butter (in small pieces) and 100 g marzipan.

Knead 2/3 of the mix with an egg to a dough.

Roll out the dough and place it in a springform (26 cm diameter). Press to the bottom and sides. Pick with a fork several times.

Bake in preheated oven at 180°C for about 10 minutes.

Pit fresh cherries or drain cherries from the jar.

Mix cherries with cornstarch and sugar.

Place cherries on baked shortcrust pastry.

Sprinkle the marzipan on cherries.

Crumble the rest of the crumble mix with wet hands to bigger pieces and spread on cake.

Bake in oven at 180°C for further 35 to 40 minutes.

Leave to cool. Dust with powdered sugar. (Optional)

For some strange reason, there is nothing under point 1. on the English version when I set my iPad to „Show reader view“. (I do this to eliminate the ads, so it‘s easier to follow the recipe.)
But under the normal settings (with mini photos at each step) it said to grate the marzipan, so now I know!
