Cinnamon Roll Apple Cake
This time I thought of an apple cake that is a little different. I wanted to use a yeast dough and I came up with cinnamon rolls as the base.
My creation!!! The Cinnamon Roll Apple Cake!
The base is really soft and moist because of the cinnamon-roll layer.
I had just gotten a basket full of apples from a friend, perfect for this cake.
Here we go…
- 20 g fresh yeast or 1 sachet dry yeast
- 125 g milk
- 350 g flour
- 60 g sugar
- a pinch of salt
- some grated lemon peel
- 1 egg
- 60 g softened butter
- 70 g softened butter
- 50 g brown sugar
- 2 tsp cinnamon powder
- around 400 g apples
- some lemon juice
- 40 g melted butter
- 2 tbsp brown sugar

Disolve yeast in warm milk.

Put flour, sugar, salt, lemon peel, egg and butter in a mixing bowl.

Add yeast-milk-mixture and knead it to a smooth dough. (about 10 minutes)

Cover and leave to rise in a warm place for 1 to 1½ hours until dough double in size.

Mix butter, sugar and cinnamon until creamy.

Grease and flour a spring form (Ø 26 cm)

Roll out the dough on a floured surface to a square.

Spread the cinnamon filling evenly.

Roll up the dough.

Cut in about 1½ to 2 cm thick slices.

Place the slices (rolls) in the spring form.

Press firmly so that the hollow spaces are closed.

Peel, halve and uncore apples. Cut in slices. Drizzle with lemon juice.

Layer the apples on the base.

Brush apples with melted butter.

Sprinkle with brown sugar.

Cover spring form and leave to rise in a warm place for about 30 minutes.

Bake in preheated oven at 180° C for about 40 minutes.
