Pumpkin Chocolate Cookies
These cookies are made with pumpkin puree and chocolate chunks. Ideal for a nibble in-between or as a bring-along to a party in autumn.
At our place the cookies did not last 2 days. I couldn’t even bring some to my work. 🙂
That means they probably tasted very good!
The dough is quickly mixed, then leave to rest in the refrigerator. Using 2 spoons, the mixture is then formed to cookies. Baked in less than a quarter of an hour, ready.

Let’s do it….
- 200 g brown sugar
- 300 g flour
- 2 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon powder
- ½ tsp salt
- 1 egg
- 100 g oil
- 250 g pumpkin puree
- 200 g chocolate drops or choped chocolate

Mix sugar, flour, baking powder, baking soda, cinnamon, and salt in a bowl.

Mix egg, oil and pumpkin puree in a separate bowl.

Stir-in the flour mixture.

Last, mix in chopped chocolate.

Leave the dough to cool for half an hour in the fridge.

Using 2 tablespoons, place small heaps of dough on a baking tray with baking paper, keeping equal distance in between.

Bake in preheated oven at 180° C for about 14 minutes.
