Rum Cut Cookies

, ,

These Rum Cut Cookies are a good change on the cookie plate. They are soft, nutty and of course with a dash of rum. Perfect to a good cup of tea.

Compared to the classic biscuits, where you have to cut out or shape the dough, you simply spread the dough on a tray, bake, glaze over and cut into squares. Done! You quickly have a whole load of “cookies” or squares.

Rum Squares
  • 200 g semi-bitter chocolate
  • 200 g softened butter
  • 100 g icing sugar
  • a pinch of salt
  • 150 g flour
  • 150 g grated walnuts
Rum glaze
  • 100 ml rum
  • 300 g icing sugar
  1. Melt chocolate au bain-marie.

  2. Mix flour and nuts.

  3. Whisk butter and icing sugar until creamy and light.

  4. Stir in yolks one by one.

  5. Mix in melted chocolate.

  6. Beat egg whites, sugar and salt in a separate bowl until stiff.

  7. Alternately fold the egg whites and flour-nut mixture into the butter mixture.

  8. Spread the mixture on a baking tray with baking paper.

  9. Bake in preheated oven at 200° C for about 20 minutes.

  10. In the meantime mix the rum and icing sugar.

  11. Spread the glaze on the still hot cake.

  12. Let to dry briefly and cut into squares while still warm.

Enjoy baking!
