Lemon Crescent Cookies
These Lemon Crescent Cookies are just refreshing. They taste deliciously lemony and not too sweet.
I derived them from my Chocolate Kipferl and this is the result.
Crescent Cookies (Kipferl) simply belong on a Christmas cookie plate. Up to now we have the Chocolate Kipferl and Vanilla Crescent Cookies on our blog, this year there will be another new variety.
So, to the recipe…
- 220 g flour
- 120 g cold butter (cubed)
- 120 g powdered sugar
- 2 egg yolk
- some grated lemon peel
- 2 tbsp lemon juice
- 120 g white chocolate
- 1 tsp coconut oil
-
Put flour and cold, cubed butter in a bowl, and crumble.
-
Add rest of ingredients and knead to a dough.
-
Divide in two pieces, and form to a roll.
-
Place in fridge for about ½ an hour.
-
Cut off small pieces and form to Crescent Cookies. Use some flour if necessary.
-
Place cookies on a baking tray with baking paper and bake in preheated oven at 180° C for about 10 minutes.
-
Leave to cool.
-
Chop white chocolate and melt (over bain-marie).
-
Dip the ends of the cookies in the chocolate and leave to dry.
-
Store in a cookie tin.
Enjoy baking!
