Red Wine Cake with Cherries

This simple red wine cake with cherries tastes especially delicious in the colder season.
Although it was really spring-like the last few days, it still tasted really good.

You can taste the red wine out really well and of course the fruity cherries, crunchy chocolate chips the cinnamon! Simply a pleasure!

This cake is the perfect treat at family gatherings. It is also very convenient since you can bake it a day in advance and on the second day it is still very moist.

You can also use cherry juice or grape juice instead of red wine, maybe better for children.

Red Wine Cake with Cherries
Zutaten
  • 1 glas of cherries (about 350g drained weight)
  • 250 g softened butter
  • 200 g sugar
  • some vanilla
  • a pinch of salt
  • 4 eggs
  • 300 g flour
  • 2 tsp baking powder
  • 1 tbsp cinnamon
  • 2 tbsp cocoa powder
  • 100 g chopped chocolate
  • 250 ml red wine
Anleitungen
  1. Grease and flour a 26 cm Ø spring form.

  2. Drain cherries in a sivee.

  3. Preheat oven at 170° C.

  4. Whisk butter, sugar, vanilla and salt until light and creamy.

  5. Stir-in the eggs, one by one.

  6. Mix the dry ingredients and stir in the red wine in the butter-mixture.

  7. Pour in the spring form.

  8. Spread cherries on top and press slightly in the mixture.

  9. Bake in preheated oven at 170° C for 60 – 70 minutes.

  10. Leave to cool and dust with powdered sugar.

Rezept-Anmerkungen

You can use cherry juice or grape juice instead of red wine, maybe better for children.
