Wild Garlic, Potato and Bacon Rolls

Before this years wild garlic season comes to an end, I have a recipe for you. We have classical wild garlic, potato and bacon rolls.

Nice and crispy on the outside and soft on the inside – that’s how I would describe these delicious rolls.
The taste of wild garlic and bacon comes through really well.

Our favourite way to eat these wild garlic rolls is fresh out of the oven, either plain, or with a little butter on top. With the savoury ingredients like wild garlic, bacon, onion and potato, you do not need anything else.

These rolls are ideal for on the road, picnics, and they still taste good on the next day.

Wild Garlic, Potato and Bacon Rolls
Zutaten
  • 200 g boiled potatoes
  • 150 g bacon
  • 1 small onion
  • 1 tbsp ghee or lard
  • 200 g lukewarm water
  • 15 g fresh yeast or 5g dry yeast
  • 350 g wheat flour
  • 150 g rye flour
  • 3 tsp baking malt
  • 2 tsp salt
  • 100 g fresh wild garlic leaves
Anleitungen
  1. Press the freshly cooked potato in a potato masher and let it steam out. If you have cooked potatoes from the day before, it is best to grate them finely.

  2. Cut bacon and onions into small cubes and fry in fat. Leave to cool a little while.

  3. Knead a dough of water, yeast, wheat flour, rye flour, baking malt, salt, potato and bacon mixture.

  4. Cover and leave to rise in a warm place for about 1 hour.

  5. Chop the wild garlic finely.

  6. Place the dough on a well-floured surface and knead in the wild garlic.

  7. Divide the dough into 12 pieces.

  8. Shape each piece into a round shape.

  9. Flour a little and place on a baking tray with baking paper with the end facing up.

  10. Leave to rise in a warm place for about 30 minutes.

  11. Bake in a preheated oven at 210° C for 20 minutes (with steam).
