Linz “Eye“ Cookies

These are probably one of the best-known Christmas cookies. The Linz “Eye” Cookies are cut out of a simple shortcrust pastry and filled with jam.

A classic on the biscuit plate!!! I got this recipe from my mum many years ago.

Vanilla Crescent Cookies
Coconut Macaroons

Linz “Eye” Cookies
Short pastry
  • 300 g flour
  • 200 g butter, in small pieces
  • 100 g icing sugar
  • 2 egg yolks
  • a pinch of salt
  • some grated lemon peel
To Finish
  • jam for filling
  • icing sugar to sprinkle
  1. Mix all ingredients for the short pastry to a dough.

  2. Wrap in cling film and place in fridge for about 30 minutes.

  3. Roll out the dough on floured surface 3 mm thick. Cut out with a cookie cutter. The half of it with holes.

  4. Place on baking tray with baking paper.

  5. Bake in preheated oven at 180° C for about 8 minutes.

  6. Sprinkle the biscuits with holes with icing sugar. Spread jam on the others and stick together.
