Linz “Eye“ Cookies
These are probably one of the best-known Christmas cookies. The Linz “Eye” Cookies are cut out of a simple shortcrust pastry and filled with jam.
A classic on the biscuit plate!!! I got this recipe from my mum many years ago.

Gingerbread
Vanilla Crescent Cookies
Coconut Macaroons
Speculoos
- 300 g flour
- 200 g butter, in small pieces
- 100 g icing sugar
- 2 egg yolks
- a pinch of salt
- some grated lemon peel
- jam for filling
- icing sugar to sprinkle

Mix all ingredients for the short pastry to a dough.

Wrap in cling film and place in fridge for about 30 minutes.

Roll out the dough on floured surface 3 mm thick. Cut out with a cookie cutter. The half of it with holes.

Place on baking tray with baking paper.

Bake in preheated oven at 180° C for about 8 minutes.

Sprinkle the biscuits with holes with icing sugar. Spread jam on the others and stick together.
