Rhubarb Crumble Muffins

It is finally rhubarb season! 🙂 We really like this sour vegetables, we hid rhubarb peaces in the muffin and sprinkles it with crumble to make it a bit crispy.

These rhubarb muffins with crumbles are really quick to make and you don’t even need an electric mixer.

Moist on the inside, slightly sourly sweet and fruity with crunchy crumble on top, tastes really delicious!

Rhubarb Crumble Muffins
Portionen: 12 Muffins
Zutaten
Crumbles
  • 100 g flour
  • 70 g sugar
  • a pinch of salt
  • 70 g butter
Muffin batter
  • 300 g rhubarb
  • 200 g flour
  • 150 g sugar
  • a pinch of salt
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • 2 eggs
  • 150 g oil (e.g. sunflower, something neutral from taste)
  • 150 g plain jogurt
  • a dash of lemon juice
  • some vanilla extract
Anleitungen
  1. For the crumble: Mix the flour, sugar and salt in a bowl.

  2. Add the butter in pieces and knead with your fingers until crumbles form.

  3. Place in the fridge until ready to use.

  4. Wash the rhubarb, peel if necessary and cut into small pieces.

  5. For the muffin batter: Combine the flour, sugar, salt, baking powder and baking soda in a mixing bowl.

  6. In another bowl, mix eggs, oil, yoghurt, lemon juice, and vanilla (use a whisk for best results). Just until ingredients are fluid and well mixed.

  7. Add the fluid mixture to the flour mixture and stir well.

  8. Finally stir in the rhubarb.

  9. Line a muffin tin with paper liners.

  10. Divide the muffin batter into 12 muffins.

  11. Scatter the sprinkles on top.

  12. Bake in a preheated oven at 180°C for about 30-35 minutes. Do a toothpick test.

  13. Let the muffins cool on a wire rack.
