Moist Chocolate Sheet Cake
This chocolate sheet cake is one of the first cakes I made on my own as a child. It always turned out great and tasted really delicious!
Chocolaty, but still not too sweet and really moist. That’s comes from the fruit tea, which is poured over the cake after baking. But don’t worry, it won’t get mushy.
The chocolate glaze is quite soft, so you can cut it very well and it won’t break.
This time I decorated the pieces with strawberries. But you can also use other fruits, sprinkles or nuts.
It is also a great cake for children’s birthday parties. I suggest you leave out the rum so the children can enjoy it too! 🙂
- 6 eggs (separated)
- 200 g sugar
- 250 g softened butter
- 2 tsp vanilla sugar
- 250 g flour
- 50 g cocoa powder
- 2 tsp baking powder
- 100 ml milk
- 200 ml fruit tea
- 2 tbsp rum
- 200 g semi-bitter chocolate
- 200 ml single cream
- Approx. 150 g red current jam or any other slightly sour jam
- To decorate strawberries, other fruits, sprinkle or nuts

Beat the egg whites with half the sugar until stiff.

Mix the softened butter with the remaining sugar and vanilla sugar, until light and creamy.

Stir in the yolks one by one.

Mix the flour, cocoa and baking powder and stir into the butter mixture with the milk.

and last, fold in the beaten egg white.

Spread the mixture evenly on a baking tray with baking paper.

Bake in preheated oven at 180° C for about 20 minutes.

Chop chocolate for the glaze.

Bring the single cream to boil and pour it hot over the chocolate.

After around one minute, stir the glaze until smooth.

pour the fruit tea over the cake.

Stir the jam until smooth and spread evenly on the cake.

Pour the glaze over the cake and spread it by tilting the tray.

Decorate and leave to cool out completely.
I like to use a baking frame on the baking tray, but this is not really necessary, you can do without.
