Carnival Titbits

Another Austrian speciality the “Schürfi” aka “Polsterzipf” (Polster Zipf = cushion or pillow corner) We called it Carnival Titbits.

Schürfi are pieces of dough which are fried and they blow up like a cushion.
Can be eaten warm or cold with apple puree for example.

I got this recipe from my aunt. Thank you aunty. 🙂

Carnival Titbits
Zutaten
  • 300 g flour
  • 30 g softened butter
  • 200 g sour cream
  • 10 g powder sugar
  • 1 egg yolk
  • 2 cl Rum
  • a pinch of salt
  • 1 tsp vanilla extract
To fry
  • lard, ghee or oil
Anleitungen
  1. Mix and knead all ingredients to a soft dough.

  2. Place in fridge to rest for minimum 30 minutes.

  3. Roll out on a well floured surface and cut out triangles.

  4. Fry the triangle pieces in hot fat (not too hot) till gold brownish. Place in a plate with a paper towel to let the oil drip off.

  5. To serve sprinkle with powder sugar.
