Carnival Titbits
Another Austrian speciality the “Schürfi” aka “Polsterzipf” (Polster Zipf = cushion or pillow corner) We called it Carnival Titbits.
Schürfi are pieces of dough which are fried and they blow up like a cushion.
Can be eaten warm or cold with apple puree for example.
I got this recipe from my aunt. Thank you aunty. 🙂
- 300 g flour
- 30 g softened butter
- 200 g sour cream
- 10 g powder sugar
- 1 egg yolk
- 2 cl Rum
- a pinch of salt
- 1 tsp vanilla extract
- lard, ghee or oil

Mix and knead all ingredients to a soft dough.

Place in fridge to rest for minimum 30 minutes.

Roll out on a well floured surface and cut out triangles.

Fry the triangle pieces in hot fat (not too hot) till gold brownish. Place in a plate with a paper towel to let the oil drip off.

To serve sprinkle with powder sugar.
Can be eaten warm or cold. We enjoy it with apple puree.
