We love asparagus – specialy this asparagus salad!!!
This asparagus salad is easy to prepare and really delicious!
You can have it as a side dish with meat or fish, BBQ or as a vegetarian dish.
If there is some salad left over, it still tastes good the next day for lunch.
We have this salad quite often in the asparagus season, and every time it tastes really great!
So, try out this recipe before the asparagus season is over.
Our favourite asparagus salad! Easy and delicious!
- 1 kg green asparagus
- 3 tomatoes
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
Cut the end of the asparagus and peel the last third.
Cut the asparagus and tomatoes in equal pieces.
Heat a pan with olive oil. Add asparagus and season with salt and pepper. Roast the asparagus for about 5 – 8 minutes (depending on asparagus). Tossing every now and then. (Asparagus should stay a bit crunchy)
Add tomatoes and balsamic vinegar and roast for 2 more minutes.
Asparagus salad can be served warm or cold.
